Easy Peasy Healthy Breakfast Casserole

My husband has a heart condition and his cardiologist recommends to limit his intake of eggs, so I look for ways to make our occasional egg dishes as healthy as possible.
Who loves eggs for breakfast? I know I do!
Even though eggs are delicious, it's a good idea to reduce the amount of eggs you consume per week.

When I developed this breakfast casserole, I was shocked at how great it tasted even using low cholesterol eggs!
And it's so easy to make!!  And so healthy too because it's uses reduced-fat cheeses that don't sacrifice taste.
This is so good!

PREPARE

Pre-heat oven to 375
Spray a 9 x 12 baking pan with Pam

MIX

In a single large bowl, mix together the following:
1 Large carton of Egg Beaters
1 cup drained frozen chopped spinach
1 cup diced white mushrooms 
1 package Jimmy Dean cooked turkey sausage. sliced into pieces
1 cup reduced-fat shredded cheese
1 cup 1% or fat-free cottage cheese
1 cup reduced-fat shredded cheese for topping

BAKE

Mix together and pour in your prepared pan.
Bake for 45 minutes until all liquid is absorbed. Immediately coat with the remaining shredded cheese which will melt as it cools.
