Lean-In Recipe: 'Free' Banana Bread

This snack goes great with morning coffee, could be an afternoon pick me up, or be a great end to a healthy dinner.

I've been thinking a lot about individuality and what makes us unique. When you think about it, there's no one-size-fits-all approach to maintaining our health as we age. That means what exercise works for you, may not work for me. And what foods I eat, well - it's possible that they don't work for your body and how you metabolize food for energy and overall health.

No matter what you're doing to stay healthy and active, one thing's for sure - you gotta eat. And sometimes that means saying "I got to have my sweets!" What better way to get your fix than with my 'free' banana bread. This snack goes great with morning coffee, could be an afternoon pick me up, or be a great end to a healthy dinner.

Not all recipes need to be fat-free and sugar-free because more often than not, too much is sacrificed for great taste. But my 'free' banana bread is both sugar-free AND fat-free, and still results in the best taste and texture ever.

It's easy to make, so let's get started.

1. Preheat oven to 375 degrees.

2, Spray your loaf pan with Pam or other baking cooking spray, and then line it with parchment.

2. Whisk wet bowl and dry bowl ingredients separately

INGREDIENTS

WET BOWL

  • 4 small ripe bananas, mashed
  • 2 eggs, beaten with fork, and then add
  • 6 tablespoons of unsweetened applesauce
  • 1/2 cup Fage no fat 0% yogurt
  • 1 teaspoon of vanilla
DRY BOWL
  • 3/4 cup quick oats
  • 1 and 1/4 cup Kodiak protein flour
  • 1 teaspoon of cinnamon
  • 1 teaspoon of baking soda
  • 3 teaspoons of Stevie or monk fruit
3. Combine whisked wet and dry bowl ingredients into a large bowl and then whisk them together.

4. Pour combined ingredients into your prepared loaf pan. Bake for 45 minutes or until a toothpick can come out clean. And then voila! Have your sweets with the whole family.
